Oven Roasted Baked Potatoes

Ingredients

8 fingerling potatoes

cubed

1 large onion

cubed

2 tablespoons coconut oil

melted

2 tablespoons minced garlic

1 tablespoon sea salt

Step 1

Preheat oven to 350 degrees F (175 degrees C). Line a large baking sheet with foil.

Step 2

Toss fingerling potatoes onion coconut oil garlic and sea salt in a large bowl. Spread mixture onto baking sheet; bake stirring every 10 minutes until potatoes are tender about 30 to 40 minutes.
