Frosting and Icing - Dessert
This is an old family favorite because it is not as sweet tasting as other frostings and is very fluffy.
Servings: 48 Yield: 3 cups
Seven-Minute Meringue Frosting

2 egg whites
1 pinch salt
1 ½ cups white sugar
⅓ cup water
¼ teaspoon cream of tartar
1 teaspoon vanilla extract
Dessert Step 1 In the top of a double boiler combine all ingredients but the vanilla. Beat 1 minute. Step 2 Cook over boiling water beating constantly for 7 minutes or until the icing makes firm peaks. Remove from the heat and add the vanilla. Beat until able to spread. NOTE: You can add coloring with the ingredients. You can also use another flavoring in place of the vanilla.
