Herbalicious Shrimp Dip

Ingredients

1 pound cooked peeled shrimp

chilled

3 green onions

coarsely chopped

1 small onion

coarsely chopped

1 tablespoon chopped fresh tarragon

1 ½ teaspoons dried parsley

1 teaspoon minced fresh rosemary

½ teaspoon chili powder

1 teaspoon lemon juice

1 tablespoon finely grated carrot

1 cup low-fat mayonnaise

1 cup low-fat sour cream

salt and pepper to taste

Directions

Step 1

Add shrimp green onions onion tarragon parsley rosemary chili powder and lemon juice to the jar of a blender or food processor; process the mixture until shrimp are finely chopped.

Step 2

Scrape the chopped shrimp mixture into a bowl and stir in the carrot mayonnaise and sour cream mixing until well blended. Season to taste with salt and pepper. Chill at least 1 hour before serving.
