Roasted Cauliflower Mac and Cheese

Ingredients

1 head cauliflower

broken into florets

cooking spray

salt and ground black pepper to taste

2 cups half-and-half

2 cups shredded Mexican cheese blend

1 cup shredded Cheddar cheese

2 tablespoons cream cheese

1 teaspoon unsalted butter

Directions

Step 1

Preheat the oven to 375 degrees F (190 degrees C).

Step 2

Spray cauliflower florets with cooking spray and season with salt and pepper; place on a baking sheet.

Step 3

Roast in the preheated oven for 30 minutes.

Step 4

Meanwhile heat half-and-half in a saucepan over medium-low heat. Add Mexican Cheddar and cream cheeses slowly stirring to combine until melted.

Step 5

Butter an 8x10-inch baking dish.

Step 6

Mix roasted cauliflower with cheese sauce. Transfer to the prepared dish.

Step 7

Bake in the preheated oven until bubbly about 15 minutes.
