Microwave Vegetables

Combine red bell pepper and olive oil in a microwave-safe bowl. Microwave at full power until softened about 1 minute. Add peas and cook at full power for an additional 2 minutes. Add corn and cook for 1 more minute. Stir vegetables and microwave for 30 seconds more. Add cilantro and season with salt and pepper. Stir and serve immediately.
