Air fry your chicken fajitas for a quick and tasty south-of-the-border meal. The vegetables and chicken can cook at the same time, in only 10 minutes! Customize your fajitas with the toppings you love, such as: shredded cheese, sour cream, guacamole, pico de gallo, cilantro, sliced tomatoes, or tomato salsa. Serve alone as a light lunch, or with Spanish rice and refried beans for a more substantial meal.

Air Fryer Chicken Fajitas for Two

Ingredients

½ teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon ancho chile powder

or to taste

½ teaspoon garlic powder

¼ teaspoon ground coriander

salt and ground black pepper to taste

½ pound chicken breast tenderloins

½ medium green bell pepper

sliced into strips

½ medium onion

sliced into rings

2 tablespoons extra-virgin olive oil

divided

½ lime

4 (8 inch) flour tortillas

Directions

Step 1

Preheat an air fryer to 370 degrees F (190 degrees C) according to manufacturer's instructions.

Step 2

Combine cumin smoked paprika ancho chile powder garlic powder coriander salt and pepper in a bowl. Slice tenderloins lengthwise into 1/2-inch strips.

Step 3

Combine bell pepper strips and onion slices in a large bowl. Toss with 1 tablespoon olive oil then sprinkle 1/2 of the seasoning mixture over the vegetables. Toss until evenly coated. Place vegetables in the bottom of the air fryer basket.

Step 4

Combine tenderloin strips and remaining 1 tablespoon olive oil in a bowl; toss to combine. Sprinkle remaining seasoning mixture on the chicken strips and toss to coat evenly. Place chicken strips on top of the vegetables in the air fryer basket.

Step 5

Air fry until chicken is cooked through about 10 minutes. Squeeze lime juice over all the ingredients. Serve on flour tortillas.
