Horseradish Potato Salad Recipe

Ingredients

2 pounds red potatoes

scrubbed and cubed

¾ cup sour cream

½ cup mayonnaise

½ small red onion

chopped

1 rib celery

finely chopped

3 tablespoons white vinegar

2 tablespoons prepared horseradish

1 tablespoon dried parsley

1 teaspoon dried dill weed

1 teaspoon white sugar

½ teaspoon salt

½ teaspoon ground black pepper

4 hard-cooked eggs

chopped

4 slices cooked bacon

crumbled

Directions

Step 1

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender about 20 minutes. Drain and cool.

Step 2

Mix sour cream mayonnaise red onion celery vinegar horseradish parsley dill sugar salt and pepper together in a large bowl. Stir in cooled potatoes. Fold in eggs and bacon. Cover and chill until serving.
