Apple-Cinnamon Einkorn Pancakes Recipe

Ingredients

¾ cup milk

1 tablespoon distilled white vinegar

1 egg

1 tablespoon melted butter

1 cup einkorn flour

1 teaspoon ground cinnamon

1 teaspoon baking powder

¾ teaspoon baking soda

1 pinch salt

1 apple

Directions

Step 1

Combine milk and vinegar in a small bowl and set aside to sour about 5 minutes. Add egg and melted butter; beat until well combined.

Step 2

Combine einkorn flour cinnamon baking powder baking soda and salt in a large bowl. Stir well then add milk-egg mixture. Fold together gently; do not overmix.

Step 3

Grate the apple with or without the peel until you reach the core. Add grated apple to the pancake batter and fold in gently.

Step 4

Heat a lightly greased griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and edges are dry 3 to 4 minutes. Flip and cook until browned on the other side 1 to 2 minutes. Repeat with remaining batter.
