Seafood Alfredo with Mussels Recipe

Ingredients

¼ cup olive oil

or more to taste

2 pounds mussels

cleaned and debearded

¾ cup Pinot Grigio wine

2 teaspoons minced garlic

1 teaspoon dried oregano

1 teaspoon dried basil

5 dashes hot sauce (such as Texas Pete®)

salt and ground black pepper to taste

½ cup prepared Alfredo sauce

¼ cup unsalted butter

cut into chunks

2 tablespoons grated Parmesan cheese

2 tablespoons grated Romano cheese

or more to taste

8 wedges lemon

8 sprigs fresh parsley

Directions

Step 1

Heat oil over medium-high heat in a large skillet. Add mussels and cook for 4 minutes. Stir in wine garlic oregano basil hot sauce salt and pepper; cover and cook until mussels have opened up 3 to 5 minutes. Discard any mussels that have not opened.

Step 2

Reduce heat to medium add Alfredo sauce and butter and cook for 1 minute. Stir in Parmesan cheese and simmer for 2 minutes. Serve with grated Romano cheese lemon wedges and parsley.
