1 red bell pepper

1 yellow bell pepper

½ sweet onion

sliced into thick rings

1 tablespoon vegetable oil

or as needed

¼ cup chopped fresh flat leaf parsley

1 slice toasted white bread

torn into small pieces

½ lemon

juiced

½ clove garlic

minced

¼ teaspoon dried thyme

¼ cup olive oil

¼ teaspoon kosher salt

Step 1

Preheat an outdoor grill for medium-high heat and lightly oil the grate.

Step 2

Rub red pepper yellow pepper and onion slices with vegetable oil to prevent sticking.
