½ large red onion

4 green onions

minced

3 garlic scapes

minced

1 red bell peppers

minced

2 carrots

peeled and minced

2 large stalkscelery

minced

⅓ large English cucumber

minced

⅓ zucchini

minced

2 (15 ounce) cans chickpeas (garbanzo beans) - drained

rinsed

and mashed with a fork

2 tablespoons capers

with liquid

¼ teaspoon ground paprika

⅛ teaspoon cayenne pepper

¼ cup Italian-style salad dressing

salt and ground black pepper to taste

1 tablespoon olive oil

12 slices whole-wheat bread

Directions

Step 1

Mix red onion green onions garlic scapes red bell pepper carrots celery English cucumber zucchini chickpeas capers paprika cayenne pepper and Italian dressing together in a large bowl. Season with salt and ground black pepper.

Step 2

Drizzle olive oil on one side of each bread slice and spread chickpea mixture on half the slices. Top with second piece of bread to make a sandwich.
