4 russet potatoes

scrubbed and cubed

3 yellow onions

diced

2 green bell peppers

diced

2 red bell peppers

diced

1 cup extra-virgin olive oil

3 tablespoons salt

or to taste

1 tablespoon paprika

or more to taste

1 tablespoon ground black pepper
