Gluten-Free Coconut Cake Recipe

Ingredients

2 cups gluten-free flour

1 ½ cups white sugar

1 cup flaked coconut

½ cup chopped walnuts

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon xanthan gum

1 teaspoon salt

1 cup coconut milk

1 cup vegetable oil

4 eggs

1 teaspoon vanilla extract

Step 1

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.

Step 2

Whisk flour sugar coconut walnuts baking powder baking soda xanthan gum and salt together in a bowl. Add coconut milk vegetable oil eggs and vanilla extract; mix until batter is smooth. Spread batter into the prepared baking dish.

Step 3

Bake in the preheated oven until a toothpick inserted in the center comes out clean about 45 minutes.
